As no one has mentioned them, what about the museum at the Lancers barracks in Parramatta. There were on my last visit, a Staghound, Ferrets, Daimler Dingo, Covenanter Bridgelayer and Matilda there.

And also the Royal Australian Artillery National Museum at North Head, Sydney. No vehicles, from memory, just artillery.
