HI Phil,
I don't see why a guy couldn't change the gauge type fairly easily. YOu could probably use the same hole the sender tube goes in and just put an electric sending unit in, or in another plug hole in the water jacket. The its a matter of running a couple of wires.
In fact that was what was done with these gauges. They are on an M7 snow tractor sure, but the M7 power plant is a Willys 4 cylinder engine. The Willys , in a jeep body, normally has a thermostat tube as your chevy does.
