Rob,I just figured that if I knew how much material was removed I would have a better idea how much shim I need.

If you go with shims, then you will have to use rivets. You will lose a portion of the lining to the rivets.

If you go with bonded shoes, you will have to arc them to fit. You can have thicker linings installed in the first place to make up for the turned material and then have them arced to suit the drum.

For the limited use that our carriers see, I simply had my shoes re-lined with the stock thickness and matched the arc by removal of lining material. I really doubt I will ever put enough miles on to wear out a set of shoes.

Many on this site report better friction from the older style of woven material. My carrier has bonded modern linings and I am quite happy with them up to now. It is almost time for their first adjustment mind you.
